Latin Cuisine

Latin American meals are fresh and filling and feature potatoes, corn, squash, beans, meat, milk, rice and cheeses. Thick soups are an indispensable part of the main meal and frequently are a meal in themselves. The majority of the Latin region favors the hot or spicy rather than the sweet.

  • Every Latin American country has a unique ceviche – seafood prepared in a centuries old method of cooking by contact with acidic juice of citrus fruits instead of heat.
  • Dried shrimp or camarao seco are utilized in many dishes. Before use, they are covered with cold water and soaked overnight.
